Forest margin and a hint of spruce indicating the cool climate heritage. Light extraction built around carbonic fermentation leaves the palate quite ethereal. What tannins are present mostly take their form from the stem material so theres a botanic thread here. This wine is one of a pair made from an exceptional site in Hawkes Bay. The mature vines are planted at a high density of 6666 vines per hectare. This wine style is driven by a love of whole bunch ferment and more traditional older styles of winemaking. By using such high levels of whole bunch we embrace tannin and are rewarded with an evolution of fruit, forest and spice aromas only possible when these techniques are employed.
