The latest tiger takes everything we've learned so far
from this limestone rich site nestled in the longbush
valley approximately 20km north of Martinborough. The
small 2 acre plot of grapevines are tended as part of a
wider sustainable living ethos.
My intention this year was to illustrate the salty mineral
nature of this ancient foreshore, a character I've noticed
in the fruit but felt was muted with our traditional
extraction program. By pulling back on maceration time
significantly and also embracing the completeness of
the crop we offer an electric red full of vivacity and
youthful energy.
Aromas of red fruit, hoisin and shitake have me thinking
of duck this summer and salivating acidity promises a
happy future. We consider ourselves extremely lucky to
have the opportunity to ferment and share this fruit
with our friends around the world.
